Green tea (made from Camellia sinensis leaves) which have non undergone withering and oxidation process. For green tea, the fresh leaves of Camellia sinensis leaves are plucked from the apex and prevented from too much withering and oxidation as oolong tea and black tea. Since it is less oxidized the number of anti-oxidants in green tea is far greater than other teas.

The main component in green tea is catechins which are anti-oxidants. Types of catechins present in green tea are:
- Epicatechin (EC)
- Epigallocatechin (EGC)

- Epigallocatechin-3 gallate (EGCG)
The most important anti-oxidant is EGCG which combines with free oxygen radicals and protects DNA from damage, revents unlimited cell proliferation, blocks cancer signaling pathways, prevents fat accumulation, protects from microbial infections, decreases fatigue, and strengthens the immune system.
